WHere is a simplified take on a drink featured on a new cocktail list. Designed as a batch premix that is packed full of flavours of a festive period, rendering it ideal for your holiday party. Reserve the remaining citrus syrup you can use for breakfast cocktails, puddings, or for another batch of bikinis.
The Bikini Cocktail
Serves 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Instructions
For the Syrup: Place all the items in a saucepan, heat until it reaches a gentle boil, mixing so the sugar melts. Then, take off the stove and leave to cool fully. Transfer into an clean bottle, cap it and store chilled, where it will keep for up to a month.
Preparing the Premix: Pour all the spirits and syrup in a sizeable container, let it rest for 60 minutes, then pass it through best through a fine cloth, making it completely strained.
To serve: Add 85ml of the premix into your mixing glass packed with ice, and stir carefully for about 60 seconds until cold. Filter to a frosted cocktail glass or equivalent, top with a few cranberries and finish using a quick spritz of mandarin oil over the drink.
